I really love childhood memories and this meal is definitely a childhood memory. My mom made this often and it was so tasty. That’s the reason why I try to make it in a vegan version. I’m bound to say it worked out really well and tastes super delicious. Not as good as my mom made it but that’s normal!


  • 1 big eggplant 
  • 2 big onions
  • minced soja 
  • 1 red pepper
  • 3 tomatoes
  • 1 can tomatoes
  • water
  • salt and pepper
  • Spices (Chili, Oregano, sweet pepper
  • Rice 
  • Dipser spice ‘Hakuna Matata’ if you want to! It’s so delicious 


First of all, you need to cut the veggies. That’s the fun part, you know ? I hate cutting onions becaue they make me cry and that’s not how it should be! Cooking shouldn’t make you cry. 🙁 Then you heat them up in a big pan. Put the Soja to it and roast it gently. While the onions roast, you cut the veggies in cube and put it to the roastet onion. Deglaze it with the can tomatoes. Put some water in the can and pour it to the veggie mixe. Roast everything and cook the rice. Let the hot pot simmer for 30 Minutes. Season it with the spicery and fold the rice in. Thats it! 🙂
